1.Introduction

2.HACCPPrinciplesandImplementationintheFoodserviceIndustry
TheHACCPsystemconsistsofsevenprinciplesthatneedtobefollowedforeffectiveimplementation:
2.1HazardAnalysis:Identifyingandassessingpotentialhazardsinthefoodserviceoperation,includingbiological,chemical,andphysicalhazards.
2.2CriticalControlPoints(CCPs)Identification:Determiningcriticalcontrolpointsinthefoodserviceprocess,wherecontrolmeasurescanbeappliedtoeliminateorreduceidentifiedhazards.
2.3EstablishingCriticalLimits:SettingspecificcriteriaforeachCCPtoensurethefoodmeetssafetystandards.Theselimitsmayincludetimeandtemperaturerequirements,microbiallevels,orchemicalconcentrations.
2.4MonitoringProcedures:DevelopingasystemtomonitoreachCCPregularlytoensurethatcriticallimitsarebeingmetconsistently.
2.5CorrectiveActions:Establishingprocedurestobefollowedwhenadeviationfromcriticallimitsoccurs,includingidentifyingthecauseofthedeviation,takingcorrectiveactions,andpreventingfurtherissues.
2.6VerificationProcedures:ImplementingprocedurestoverifytheeffectivenessoftheHACCPsystem,suchasregularaudits,testing,andevaluations.
2.7Record-KeepingandDocumentation:MaintainingdocumentationoftheentireHACCPsystem,includinghazardanalysis,CCPidentification,criticallimits,monitoringrecords,correctiveactions,andverifications.Theserecordsareessentialforcomplianceandcontinuousimprovement.
