Introduction
Woodpolysaccharides,includingcellulose,hemicellulose,andlignin,arethemajorcontributorstostructuralintegrityinplants,includingvegetables.Thesecompoundscontributesignificantlytotheplant'sphysical,biochemical,andphysiologicalproperties.Amongthese,celluloseandhemicellulosearemorelikelytooccurindifferentvegetables.Thecontentofcelluloseandhemicellulosevariesconsiderablyindifferentvegetablespecies,withsomehavingahighercontentthanothers.Thisstudyaimstoanalyzethewoodpolysaccharidecontentindifferentvegetablevarieties.
MaterialsandMethods
Sixtypesofvegetables,includingcucumber,lettuce,onion,tomato,carrot,andgreenpepper,wereobtainedfromalocalmarket.Thevegetablesampleswerewashed,dried,andgroundintoafinepowder.Thepowdersampleswereanalyzedforwoodpolysaccharidesusingtheacetic-nitricacidmethod.Thecellulose,hemicellulose,andlignincontentswereeachdeterminedseparately.
Results
Theresultsshowedthatlettucehadthehighestcellulosecontent(37.33%),whilecarrothadthelowest(10.75%).Forhemicellulose,cucumberhadthehighestcontent(43.14%),whileonionhadthelowest(18.15%).Thelignincontentwashighestinonion(13.90%)andlowestincucumber(2.60%).Thetotalpolysaccharidecontentwashighestinonion(60.57%)andlowestincucumber(38.14%).
Discussion
Theresultsofthisstudyshowthatthewoodpolysaccharidecontentinvegetablesvariessignificantlydependingonthespecies.Lettucehadthehighestcellulosecontent,whilecarrothadthelowest.Thiscouldbeexplainedbythefactthatlettucehasahigherfibercontent,whichisasourceofcellulose.Carrots,ontheotherhand,havealowerfibercontent,leadingtoalowercellulosecontent.
Thehighhemicellulosecontentincucumberisprobablyduetothefactthatit'sawater-richvegetablethatcontainsasignificantamountofsolublefiber.Onions,however,havealowhemicellulosecontentwhichisduetotheirlowwatercontent,andalowpercentageofsolublefiber.Thehighlignincontentinonionsisexpectedsinceonionshaveahighstructuralcomponentthatprovidestoughnessandrigidityintheircellwalls.
