Abstract:
Inrecentyears,therehasbeengrowinginterestinthedevelopmentofnaturalcoatingsforfoodpreservation.Inthisstudy,agelatin-chitosan-cinnamonessentialoilnaturalcoatingsolutionwaspreparedanditsantibacterialeffectswereinvestigated.Theaimwastoexplorethepotentialofthisnaturalcoatingasanalternativetosyntheticantibacterialcoatings.Thepreparationprocessinvolvedtheblendingofgelatin,chitosan,andcinnamonessentialoil,followedbytheincorporationofwatertoformasolution.Thesolutionwasthenappliedtothesurfaceoffreshfruitsanditsantibacterialeffectswereevaluatedthroughmicrobiologicalanalysis.Theresultsshowedthatthegelatin-chitosan-cinnamonessentialoilcoatingdemonstratedsignificantantibacterialactivityagainstbothgram-positiveandgram-negativebacteria,includingcommonfoodbornepathogens.Furthermore,thenaturalcoatingshowedgoodadhesiontothefruitsurfaceandmaintaineditsantibacterialpropertiesduringstorage.Thisstudyprovidesvaluableinsightsintothedevelopmentofnaturalcoatingsforfoodpreservation,withpotentialapplicationsinthefoodindustry.
1.Introduction:

Foodspoilagecausedbymicrobialcontaminationisamajorconcerninthefoodindustry.Syntheticantibacterialcoatingshavebeenwidelyusedtoextendtheshelflifeoffruitsandvegetables.However,thereisincreasingpublicconcernaboutthepotentialhealthrisksassociatedwithsyntheticadditives.Therefore,thereisaneedtoexplorenaturalalternativesthatcanprovideeffectiveantibacterialprotection.
1.2Aim:
Theaimofthisstudyistoprepareagelatin-chitosan-cinnamonessentialoilnaturalcoatingsolutionandevaluateitsantibacterialeffectsonfreshfruits.Thepotentialofthisnaturalcoatingasasafeandeffectivealternativetosyntheticantibacterialcoatingswillbeassessed.
