Abstract:
Aquaticproductshavebecomeanimportantsourceofnutritionformanypeopleworldwide.However,allergicreactionstocertaincomponentsintheseproducts,suchasfishandshellfish,havebecomeasignificantconcern.Theallergenichistidinekinase,alsoknownasATP-bindingcassettetransporter(ABCtransporter),hasbeenidentifiedasanimportantallergeninaquaticproducts.Thispaperaimstoexplorethecurrentresearchprogressonallergenichistidinekinaseinaquaticproducts,includingitsidentification,allergicreactions,andpossiblemitigationstrategies.Thefindingsinthispaperwillcontributetoenhancingtheunderstandingofallergenichistidinekinaseandfacilitatethedevelopmentofsaferandmoresustainableaquaticproducts.
1.Introduction
Aquaticproductshavebeenacrucialpartofhumandiets,providinghigh-qualityprotein,vitamins,andessentialfattyacids.Despitetheirnutritionalvalue,theycanalsotriggerallergicreactionsinsusceptibleindividuals.Allergenichistidinekinase,aproteincomponentfoundinvariousaquaticproducts,hasbeenidentifiedasamajorallergenresponsibleforallergicreactions.Thispaperaimstosummarizethecurrentresearchprogressonallergenichistidinekinase,includingitsidentification,allergicreactions,andpotentialmitigationstrategies.
