Biogenicaminesarenaturalcompoundsthatareformedthroughthedecarboxylationofaminoacidsinanimaltissues.Highlevelsofbiogenicaminesinmeatandpoultryproductsindicatethepresenceofmicrobialcontaminationandcanposesignificanthealthriskstoconsumers.Inordertoensurefoodsafety,itisvitaltodeveloprobustandaccuratemethodsforthedeterminationofbiogenicaminesinmeatandpoultry.Thispaperaimstoproposeimprovementsinthecurrentnationalstandardmethodforthedeterminationofeightbiogenicaminesinmeatandpoultryusinghighperformanceliquidchromatography(HPLC).
