Abstract:
Thearomaofwineplaysacrucialroleinitsoverallsensoryexperience.GasChromatography-MassSpectrometry(GC-MS)isapowerfulanalyticaltechniquethatenablestheidentificationandquantificationofaromacompoundspresentinagivensample.Inthisstudy,GC-MSwasemployedtoperformacomparativeanalysisofthearomacomponentspresentintwotypesofwines.Theobjectivewastoidentifyandevaluatethekeyaromacompoundsthatcontributetotheuniquesensorycharacteristicsofeachwine.
Introduction:
Thesensoryevaluationofwinereliesheavilyonthearomaprofile,whichisinfluencedbyavarietyofvolatilecompoundspresentinthewine.Thecompositionofaromacompoundsinwinecanvarysignificantlydependingonfactorssuchasgrapevariety,vineyardlocation,fermentationconditions,andagingtechniques.GC-MSisconsideredagoldstandardanalyticaltechniqueforthecomprehensiveanalysisofaromacompoundsduetoitsabilitytoseparate,identify,andquantifyindividualcompoundswithinacomplexmixture.
Methodology:
Twodifferenttypesofwines,W1andW2,wereselectedforthisanalysis.BothwinesweresubjectedtoGC-MSanalysisfollowingastandardprotocol.Aheadspacesolid-phasemicroextraction(HS-SPME)techniquewasemployedtoextractthevolatilecompoundsfromthewines.Theextractedcompoundswerethenseparatedusinggaschromatographyandidentifiedbasedontheirmassspectralcharacteristics.Therelativeabundanceofeachcompoundwasdeterminedusingpeakareameasurements.
ResultsandDiscussion:
TheGC-MSanalysisrevealedawiderangeofaromacompoundspresentinbothW1andW2wines.Theidentifiedcompoundsincludedalcohols,esters,acids,aldehydes,ketones,andterpenes,amongothers.Thequantitativeanalysisofthesecompoundsprovidedvaluableinsightsintothedifferencesinaromaprofilesbetweenthetwowines.
InW1,ahigherabundanceofesters,suchasethylacetateandisoamylacetate,wasobserved.Thesecompoundsareknowntocontributefruityandfloralnotestowines.Additionally,higherlevelsofterpenes,suchaslinaloolandgeraniol,weredetectedinW1,whichareassociatedwithcitrusandfloralaroma
