Abstract:
TheaimofthisstudywastodeterminethepresenceandconcentrationofvanillininvanillapodsusingGasChromatography-MassSpectrometry(GC-MS).Vanillinistheprimaryflavorcompoundresponsibleforthedistinctaromaandtasteofvanilla.Thevanillapodswereextractedusingasolventextractionmethod,andtheobtainedextractwasanalyzedusingGC-MS.Theresultsshowedthepresenceofvanillinintheextractwithaconcentrationof[insertconcentration].Theanalyticalmethodusedinthisstudycanbeemployedforqualitycontrolandauthenticityassessmentofvanillaproducts.
Introduction:
Vanillaisoneofthemostpopularandwidelyusedflavorsinthefoodandbeverageindustry.Thedistinctaromaandtasteofvanillaareprimarilyattributedtovanillin,whichisthemajorflavorcompoundfoundinvanillabeans.Vanillinisaphenolicaldehydethatisnaturallysynthesizedbythevanillaorchidplant.Anaccuratedeterminationofthevanillincontentinvanillapodsisessentialforensuringthequalityandauthenticityofvanillaproducts.GasChromatography-MassSpectrometry(GC-MS)isapowerfulanalyticaltechniquethatcanprovidepreciseandreliablemeasurementsofvolatilecompoundssuchasvanillin.
Methods:
Vanillapodswereobtainedfromareputablesourceandstoredundercontrolledconditions.Asolventextractionmethodwasusedtoextractthevanillinfromthepods.Inbrief,powderedvanillapodsweremixedwithasuitablesolvent(e.g.,ethanol)andsonicatedforaspecificperiod.Theresultingextractwasthenfilteredandconcentrated.GC-MSanalysiswasperformedusinga[insertGC-MSinstrument]equippedwitha[insertcolumntype].ThesampleextractwasinjectedintotheGC-MSinstrument,andtheseparationanddetectionofvanillinwerecarriedoutusingasuitabletemperatureprogram.
Results:
TheGC-MSanalysisofthevanillapodextractrevealedthepresenceofamajorpeakcorrespondingtovanillin.Theretentiontimeandmassspectrumofthepeakwereconsistentwiththoseofastandardvanillincompound.Theconcentrationofvanillinintheextractwasdeterminedtobe[insertconcentration].Thisresultconfirmsthepresenceofvanillinastheprimaryflavorcomponentintheva
